Creamy Maple Butter Oat Milk Latte with Foamy Espresso and Spiced Cinnamon Cold Foam

There’s something about fall that makes me light up inside. The change of seasons brings with it a sense of coziness and comfort, along with flavors I wait for all year long. Flavors such as maple, apple, pumpkin, and cinnamon make me feel warm and cozy! They’re the tastes that instantly transport me into an autumn state of mind, even when the weather around me doesn’t quite cooperate.

Living in Dallas, fall is a tricky season. September feels like summer, October isn’t much different, and by the time November finally cools down, December often skips straight to a chill I don’t enjoy. Because of this, I’ve learned to create my own little pockets of fall through food and drinks. One of my favorite ways to do this is with iced coffee. Even if the temperatures outside are still climbing, I can infuse my glass with the cozy flavors of the season.

That’s exactly why I love making my Creamy Maple Butter Oat Milk Latte with Foamy Espresso and Spiced Cinnamon Cold Foam. It’s layered, indulgent, and full of maple sweetness, yet still refreshing enough for the hot Dallas afternoons.

Why Maple Butter Makes This Drink Special

Maple syrup has long been a favorite sweetener for drinks, but maple butter takes things up a notch. Maple Butter is simply pure maple syrup that has been whipped into a creamy, spreadable texture. It’s velvety, thick, and deeply flavored, with that unmistakable maple taste that feels both comforting and sophisticated. I use the one from Trader Joe’s.

When you spread it around the inside of your glass, it melts into the oat milk as the ice shifts, creating sweetness that mix naturally with every sip. I absolutely love the presentation of this latte. Watching the maple butter swirl into the milk and espresso gives this latte a café-worthy aesthetic that makes the ritual of making it feel indulgent.

The Choice of Oat Milk

Not all plant-based milks perform the same in coffee drinks. For this recipe, oat milk is ideal because of its creamy texture and mild flavor. I personally love using Chobani Extra Creamy Oat Milk when I want a more luxurious mouthfeel because it’s thick, rich, and almost like whole milk in texture.

But when I want to keep things lighter, I reach for Mooala Oat Milk from Costco. It’s a little more neutral, lower in calories, and perfect if you want to enjoy this latte regularly without feeling like it’s too indulgent. That flexibility means you can customize the drink based on your goals: treat yourself on a cozy weekend morning or make a lighter version for everyday sipping.

Instant Espresso with a Café Finish

While you could use freshly brewed espresso, I’ve found that Nescafe Gold espresso powder is an excellent shortcut. It dissolves easily in hot water, creating a smooth espresso-like base. By frothing it with monk fruit sweetener and hot water, you create a foamy layer that sits beautifully on top of the oat milk. Not to mention, the amount of foam makes it have the best creamy texture!

I like monk fruit sweetener because it adds sweetness without the calories of sugar, but regular sugar works perfectly too. This recipe is adaptable so you can adjust sweetness levels based on your preference.

The best part? You don’t need an espresso machine. A spoonful of espresso powder, a little hot water, and a frother are all you need to create that coffeehouse foam. You can find the frother I use here.

Cold Foam: The Finishing Touch

No specialty drink feels complete without a topping, and in this case, the cold foam is everything. A simple mixture of heavy cream and Trader Joe’s Maple Butter turns into a rich, slightly sweet cloud when frothed for about 40 seconds. It’s indulgent but balanced, adding another layer of maple flavor to tie the whole drink together.

Once you spoon or pour it over your espresso, you get that irresistible layered effect: creamy oat milk at the bottom, dark espresso in the middle, and maple-infused cold foam crowning the top. Finish it off with a dusting of ground cinnamon, and you’ve got a drink that looks like it came straight from your favorite café menu.

Tips for Success

  • Use a clear glass. This isn’t just for aesthetics but because seeing the layers makes the experience more enjoyable, and it’s part of what makes this latte feel special.
  • Adjust sweetness. If you like your coffee on the stronger side, reduce or skip the monk fruit sweetener. If you prefer it sweeter, add a little extra maple butter or another teaspoon of sugar.
  • Froth generously. The longer you froth the espresso mixture and the cold foam, the more volume and texture you’ll get. I usually aim for 40 seconds for the foam, but you can stop earlier if you want it lighter.
  • Serve immediately. This drink is best enjoyed right away, while the foam is still thick and the ice keeps everything chilled.

Variations to Try

  • Dairy-Free Cold Foam: Instead of heavy cream, use a plant-based whipping cream alternative or coconut cream for a fully vegan version.
  • Pumpkin Spice Twist: Add a pinch of pumpkin pie spice to the cold foam in fall for a seasonal variation.
  • Vanilla Maple Latte: Add a few drops of vanilla extract to the oat milk before pouring in the espresso for a subtle flavor layer.
  • Extra Coffee Kick: Double the amount of espresso powder if you want something closer to a strong iced latte.

When to Enjoy This Drink

This latte feels particularly fitting during autumn, thanks to its maple and cinnamon flavors. Imagine sipping it on a cool morning with a blanket, or bringing it outside to enjoy with crisp fall air. But honestly, it works year-round. In summer, it’s refreshing and chilled; in winter, you can even adapt it into a warm latte by skipping the ice and serving everything hot.

It’s also a great option to serve guests. If you’re hosting brunch, making a round of these will instantly elevate the spread. The presentation alone is impressive, and most people won’t expect maple butter to make an appearance in their coffee.

Health Notes

While this latte does contain heavy cream in the foam, the overall portion is small, and you can easily lighten it by using half-and-half or a plant-based alternative. Monk fruit sweetener keeps the sugar content down, and oat milk provides a creamy texture without the saturated fat of dairy milk.

The balance of indulgence and health-conscious choices makes this drink something you can enjoy regularly without guilt.
