The first time I experienced Butterfly Pea Tea was in Thailand. I have been to Thailand several times and I absolutely love it! The second time I had it was during The Auntie Kitchen Show, when we were diving deeper into Thai culture beyond just food and exploring the small, everyday details that people grow up with.

But my personal twist is mixing it with Sprite.

It sounds simple, but it is so good. The citrusy, slightly sweet bubbles pair perfectly with the tea, and the color becomes even more vibrant. It turns into something that feels like a specialty drink you would order at a café.

It is also perfect if you are hosting. You can serve the tea blue and then add the lemon in front of your guests so they can watch it change color. It becomes an experience, not just a drink.

You Can Get Creative With It

Ingredients
  

  • 1-2 tsp dried butterfly pea flowers 4-6 whole dried flowers
  • 2 cups hot water
  • 1-2 tsp honey or sugar optional
  • freshly squeezed lemon juice for color changing

Instructions
 

  • Bring the water to a boil in a small pot or kettle.
  • Add the dried butterfly pea flowers to the hot water and let steep for 3–5 minutes. The water will turn a deep, vibrant blue.
  • Strain the tea into cups if using loose flowers.
  • Add honey or sugar if desired and stir until dissolved.
  • Slowly add fresh lemon juice and watch the color change from deep blue to a rich purple.
  • Serve warm or let cool and pour over ice for a refreshing iced version.
