This recipe blends the cozy flavors of homemade butter chicken with the crisp layers of puff pastry. The result is a handheld snack that tastes rich and looks impressive and really doesn’t take much effort.

I First Saw Something Similar on TikTok

I first came up with this idea after seeing someone experiment with puff pastry and leftover butter chicken on TikTok. I always make extra because that sauce is too good to waste. One day, while looking at the leftovers, I thought, why not wrap it up in pastry and bake it, just like that creator online? I wish I had saved the video so I could tag her and acknowledge her idea. I have made my own version inspired by hers!

The Secret to a Perfect Butter Chicken Filling

The success of this recipe depends on flavorful butter chicken. If you’ve tried my original recipe, you know I love using Amul butter, which has a nutty aroma and richness that sets it apart. For the masala, Fadwa’s Butter Chicken Masala remains my top choice because it already includes kasuri methi, and you can easily balance the salt and spice.

If you don’t have access to Fadwa’s, you can use any butter chicken masala you find at your local Indian grocery store or online. Just make sure to taste and adjust seasoning as you go.

When preparing the filling for this pastry, let your butter chicken cool a bit and simmer longer if it’s too runny. A thicker filling will keep the pastry crisp and prevent leaks during baking.

Ingredients You’ll Need

  • Puff pastry sheets: Store-bought puff pastry works great (Pepperidge Farm and the ones found at your local Desi store are my favorites!)
  • Butter chicken filling: You can use fresh or leftover butter chicken.
  • Egg wash: A simple mix of egg and water helps the pastry turn shiny and golden.
  • Optional garnish: Sesame seeds for a bakery-style finish.

That’s really all you need. The beauty of this recipe lies in its simplicity.

How to Assemble Butter Chicken Puff Pastry

Start by thawing your puff pastry according to the package directions. Lightly flour your work surface, then cut the pastry into squares. Each square will become a delicious little pocket filled with butter chicken.

Spoon a small amount of filling into the center of each square. Don’t overfill them, or the sauce may spill out during baking. Fold the pastry over to create a triangle or rectangle, depending on your preference, and press the edges together with a fork.

Before baking, brush each piece with egg wash for that irresistible golden sheen. You can even sprinkle a few sesame seeds on top if you like a little extra texture.

Bake until the pastry is puffed, golden, and crisp. When you bite into one, you’ll get that perfect contrast between crunchy layers and creamy spiced chicken inside.

Tips for the Best Butter Chicken Pastries

  1. Cool your filling – Hot butter chicken can make the pastry soggy. Let it cool completely before using.
  2. Don’t skip the egg wash – It gives the pastries that glossy, bakery-quality look.
  3. Seal tightly – Press the edges firmly with a fork to prevent leaks.
  4. Use parchment paper – This helps the pastries bake evenly and prevents sticking.
  5. Freeze extras – Assemble and freeze raw pastries for up to two months. Bake straight from frozen at 400°F until golden.

Serving Ideas and Pairings

These butter chicken puffs are versatile. You can serve them as:

  • Appetizers at a dinner party
  • Snacks for a movie night
  • Lunchbox favorites with a side salad
  • Party bites for game day or gatherings

They pair beautifully with mint chutney, cilantro yogurt dip, or even a simple drizzle of spicy mayo. If you want to make it a full meal, serve them with basmati rice and a crisp cucumber salad on the side.

Make-Ahead and Storage Tips

You can prepare the butter chicken filling one or two days in advance and refrigerate it. When ready to bake, just assemble and pop them into the oven.

If you want to store leftovers, keep them in an airtight container in the fridge for up to three days. Reheat in the oven at 350°F for about 10 minutes to bring back the crispiness. Avoid microwaving, as it can make the pastry soft.

Ingredients

  • 2 boneless, skinless chicken breasts cut into bite-sized chunks
  • 1.5 tbsp ghee
  • 2 tbsp Fadwa Butter Chicken Masala
  • Salt to taste
  • 1/4 tsp chili powder or more for heat
  • 1 heaping tbsp tomato paste
  • 1 tbsp sugar
  • 1 small pack Amul butter cut into cubes, 80-100 grams
  • 1/4 cup heavy cream or more if desired
  • 1 pack puff pastry
  • 1 egg for egg wash
  • a few black sesame seeds for garnish

Instructions

Prepare the Butter Chicken

  • Cut the chicken breasts into bite-sized chunks. Pat them dry with a paper towel so they sear nicely.
  • In a large pan, melt the ghee over medium heat. Add the chicken pieces and sauté until they are about halfway cooked and look light golden on the outside but still soft inside.
  • Sprinkle in the Fadwa Butter Chicken Masala, then add salt and chili powder. Stir well so every piece of chicken is coated with the seasoning.
  • Add the tomato paste and mix thoroughly. Stir in the sugar and let it dissolve into the sauce – this balances the tomato paste acidity and gives the dish a signature buttery sweetness.
  • Drop in the cubes of Amul butter and let them melt slowly, coating the chicken and forming a silky base. The sauce will start to thicken and take on a glossy, rich color.
  • When the chicken is about ¾ done and tender, pour in the heavy cream. Stir gently to combine and let it simmer for 2–3 minutes. Immediately turn the heat off. Do not overcook the cream; you just want everything to come together smoothly.
  • Once the sauce looks luscious and the chicken is fully cooked, remove from heat. Let cool.

Prepare the Puff Pastry Pockets

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Allow the puff pastry sheets to thaw just enough to become pliable but still cool to the touch.
  • Roll out the puff pastry slightly on a lightly floured surface to smooth out the folds. Cut each sheet into even rectangles or squares, depending on the size you want for your pockets.
  • Spoon about 2–3 tablespoons of the butter chicken mixture into the center of each pastry square. To make the filling extra creamy and prevent drying, stir in an extra tablespoon of heavy cream or a small cube of butter right before assembling. This keeps the filling rich and moist during baking.
  • Fold the puff pastry over the filling to form a rectangle or triangle pocket. Press the edges together firmly with a fork to seal
  • Transfer the pockets to your prepared baking sheet. In a small bowl, whisk one egg to make an egg wash, then brush it over the tops of each pastry. This creates a shiny, golden finish.
  • Sprinkle a few black sesame seeds (optional but highly recommended for flavor and presentation) over each pastry before baking.
  • Bake for 18–22 minutes, or until the puff pastry is deeply golden, crisp, and flaky. Avoid overbaking, as the filling may start to dry.
  • Once baked, let them rest for 5 minutes before serving as the filling will be hot. Serve warm, optionally with a side of cooling yogurt-cilantro sauce or mango chutney.

Notes

  • For an extra luscious filling, stir in 1–2 tablespoons of cream right before baking or even brush a small amount of cream over the sealed edge before egg washing — this traps in moisture.
  • You can also add a small pat of butter inside each pocket before sealing for a richer bite.
  • These pastries are best enjoyed fresh from the oven when the crust is crisp and the filling is creamy.
