The first time I experienced Butterfly Pea Tea was in Thailand. I have been to Thailand several times and I absolutely love it! Butterfly Pea Tea (Color-Changing Blue to Purple)
Equipment
- small pot or kettle
- heat-safe cups or glasses
- strainer
- spoon
Ingredients
- 1-2 tsp dried butterfly pea flowers 4-6 whole dried flowers
- 2 cups hot water
- 1-2 tsp honey or sugar optional
- freshly squeezed lemon juice for color changing
Instructions
- Bring the water to a boil in a small pot or kettle.
- Add the dried butterfly pea flowers to the hot water and let steep for 3–5 minutes. The water will turn a deep, vibrant blue.
- Strain the tea into cups if using loose flowers.
- Add honey or sugar if desired and stir until dissolved.
- Slowly add fresh lemon juice and watch the color change from deep blue to a rich purple.
- Serve warm or let cool and pour over ice for a refreshing iced version.
