For the Salad
- 1 lb small potatoes (new potatoes or fingerling) halved if large
- 8 oz green beans trimmed
- 3 large eggs
- 1 cup grape or cherry tomatoes halved
- 1 5-6 oz can good quality tuna in olive oil drained and flaked
- salt & pepper to taste
For the Vinaigrette
- 3 tbsp olive oil
- 1 tbsp red wine vinegar can substitute with white wine vinegar
- 1 tsp Dijon mustard
- 1 small garlic clove finely minced (optional)
- salt & pepper to taste
For the Salad
Place the potatoes in a pot of salted water. Bring to a boil and cook until tender, about 12–15 minutes. Drain and let cool slightly.
While the potatoes cook, bring another small pot of water to boil. Add the green beans and cook for 2–3 minutes until bright green and just tender. Drain and plunge into ice water to stop the cooking.
Place eggs in a saucepan, cover with cold water, and bring to a boil. Once boiling, reduce heat and simmer for 7–8 minutes for jammy yolks (or 9–10 minutes for firmer yolks). Transfer to cold water, peel, and halve.
For the Vinaigrette
In a small bowl, whisk together olive oil, vinegar, Dijon mustard, garlic (if using), salt, and pepper until well combined.
Add it all Together
On a large platter, arrange the potatoes, green beans, tomatoes, cucumber, tuna, and eggs in sections or lightly mixed together. Drizzle with the vinaigrette. Season with extra salt and pepper if desired.
