- 1 ripe avocado mashed
- 1 handful fresh arugula
- 1 fresh salmon fillet (approx 4 to 5 oz) cooked and flaked
- 1 egg boiled and sliced
- 1 pinch crushed red pepper flakes
- 1 drizzle raw honey (approximately 1 tsp)
- salt and pepper to taste
- 1 tsp olive oil for cooking salmon
Season the salmon fillet with salt, pepper, and a drizzle of olive oil. Cook in a non-stick pan over medium heat for 3 to 4 minutes per side until cooked through. Let rest for 2 minutes then flake into large pieces with a fork.
Bring a small pot of water to a boil. Gently lower the egg in and cook for 8 minutes for a jammy yolk or 10 minutes for fully hard boiled. Transfer to an ice bath for 2 minutes, peel, and slice into even rounds.
Toast the sourdough until deeply golden and crunchy.
While the toast is still warm, spread the mashed avocado generously all the way to the edges. Season with a pinch of salt.
Layer the fresh arugula evenly across the avocado.
Pile the flaked salmon on top of the arugula, spreading it evenly across the toast.
Fan the boiled egg slices in a row down the center of the salmon.
Scatter the crushed red pepper flakes over the top.
Finish with a generous drizzle of honey over everything. Serve immediately.
