Ingredients
  

For the Eggs

  • 6 large eggs
  • 2-3 cups beet juice (store bought or from cooked beets) enough juice to cover the eggs in a saucepan

For the Filling

  • Egg yolks (from boiled eggs)
  • 1-2 tbsp mayonnaise
  • 1 tsp yellow mustard
  • 1 tsp vinegar (white or apple cider)
  • 1/2 tsp paprika
  • Pinch of salt
  • Pinch of black pepper
  • 1-2 drops yellow food coloring (optional, for a more vibrant color)

For Garnish

  • dried or fresh dill
  • Small edible flowers optional

Instructions
 

  • Place eggs in a saucepan and cover with beet juice. Bring to a gentle boil, then reduce heat and simmer for about 10–12 minutes until fully cooked.
  • Transfer eggs to an ice bath or cold water and let cool completely. This helps with peeling.
  • Peel the eggs carefully; you’ll notice a subtle pink tone on the whites. Slice in half lengthwise.
  • Remove yolks and place in a bowl. Mash with a fork until smooth.
  • Add mustard, vinegar, paprika, salt, pepper, and mayonnaise. Mix until creamy. Add a drop or two of yellow food coloring if you want that bright golden tone.
  • Spoon or pipe the filling into each egg half.
  • Sprinkle with dill and add edible flowers if desired.

Notes

  • Boiling in beet juice gives a more subtle, natural pink compared to soaking
  • If you want a deeper color, you can still let them sit in the beet juice after boiling for 20–30 minutes.
  • Mayonnaise creates a smoother, more classic texture, but the recipe works without it.
