Simple & Easy Summer Tomato Salad

A refreshing and colorful salad perfect for summer. Sweet, juicy tomatoes pair beautifully with creamy Bulgarian feta, fresh parsley, and a simple dressing of good olive oil and vinegar. It’s quick, vibrant, and a guaranteed crowd-pleaser.

- 5-6 heirloom tomatoes substitute beefsteak tomatoes (like I did)
- 6-8 oz Bulgarian Feta cut into bite-sized cubes
- 2-3 tbsp good olive oil
- 1-2 tbsp white vinegar
- chopped Italian Parsley for garnish
- salt & pepper to taste
Rinse and pat dry the tomatoes. Cut each large tomato into quarters or chunky wedges (about 6 pieces per tomato) so they hold their shape.
Place the tomato wedges in a large serving bowl. Add the chunks of Bulgarian feta and scatter the chopped parsley on top.
Drizzle the olive oil and vinegar evenly over the salad. Season generously with salt and freshly ground black pepper.
Toss just until everything is lightly coated, taking care not to break up the feta.
Enjoy at room temperature for the freshest flavor.
