For the baguette
- 6 slices French baguette, cut half an inch thick
- 2 tbsp softened butter for spreading on baguette
For the Boursin Scrambled Eggs
- 4 large eggs
- 2 tbsp heavy cream
- 1 tbsp butter good quality butter
- 2 tbsp Boursin Garlic and Fine Herbs
- salt & pepper to taste
For the toppings
- 3-4 oz smoked salmon cold smoked and thinly sliced
- 2 tbsp sour cream
- sriracha to drizzle
- dill or chives optional, for garnish
Spread softened butter on each baguette slice. Toast in a pan over medium heat butter side down until deeply golden and crispy. Set aside.
Crack eggs into a bowl, add heavy cream, and whisk until smooth and well combined.
Heat a nonstick skillet over low to medium-low heat. Add the butter and let it melt gently without browning.
Pour in the egg mixture. Using a spatula, stir slowly and continuously, pushing the eggs from the edges toward the center. Cook low and slow — do not rush or increase the heat.
When the eggs are about 80 percent set but still slightly runny and glossy, add the Boursin in small dollops. Stir gently so it melts into the eggs creating creamy herby pockets throughout.
